Why does one have an X but the other one doesn't? What does the X stand for? I am not familiar with Mac systems.

Leopard (OS 10.5) is for a home computer for the normal user. Leopard X (OS 10.5 Server) is called Server software as it is designed to run a server for work stations. The 2 versions are basically the same, but X has features needed for running multiple stations and lacking many of the features used on a home computer.

There isn't a difference. You've listed both of them incorrectly. The correct name is Mac OS X Leopard.

X means 10

MacOS Leopard is simply Mac OS 10.5

See http://en.wikipedia.org/wiki/Mac_OS_X#Versions for the list of names of Mac OS X versions

...what? There is no such thing. There's Mac OS X, which is the broad term for all versions of that operating system, and there are individual major versions, such as Mac OS X Leopard, aka, Mac OS 10.5.
